Idiazabal is a Spanish cheese made from unpasteurised sheep's milk with a relatively high fat content.
It is traditionally made only from Latxa and Carranzana sheep.
The cheese is named after the village of Idiazabal in the Basque Country.
The cheese's texture and flavour are fine and consistent, and thanks to its high fat content it leaves a delicious sensation in the mouth.






Idiazabal Natural is a traditional Spanish sheep's cheese with the protected designation of origin Idiazabal / D.O. from the Basque Country and Navarre.
It is made exclusively from unpasteurised sheep's milk of the Latxa and Carranzana breeds, which graze on mountain pastures. Their milk is rich and aromatic, and this is reflected in the resulting cheese.
The cheese has a firm, compact structure and a natural hard rind; inside, the paste ranges from pale yellow to creamy in colour and may have only a few small eyes. It stands out for the clean flavour of sheep's milk, which is intense, full and well balanced, with gently buttery and nutty notes.
It traditionally ages for at least 2–3 months, with longer ageing bringing deeper flavour nuances and a drier texture. Thanks to its rich profile, it is excellent on cheese boards, with fresh bread, honey or jam, and pairs beautifully with red wine or cider.
A whole piece weighs approximately 3kg.
