Telmo Rodríguez AS Caborcas is an outstanding red wine made predominantly from the Mencía variety, coming from the Galician region of Valdeorras.
It is an elegant, intense and exceptionally flavourful wine, dominated by aromas of fresh black fruit enriched with the scent of forest undergrowth and light tones of charred wood.
It comes from an exceptional old vineyard in the area of Ladeiras do Bibei, D.O. Valdeorras, in north-western Spain, where the Atlantic influence and continental climate shape its distinctive character. It is a red wine with a strong terroir expression, reflecting the complex granite soils and traditional varieties grown on the steep terraces above the river Bibei.

Telmo Rodríquez is a Spanish winery founded in 1994. Around the world it has a reputation as a pioneer supporting Spanish winemaking, a travelling oenologist and a "driving wine-maker". It earned this reputation above all by travelling to individual regions to make wines from a single harvest using only the region's native varieties. It also devotes special care to restoring forgotten vineyards. The Telmo Rodríquez brand reflects an immense love of wine and fine winemaking craft.
Telmo Rodríguez As Caborcas comes from an exceptional old vineyard in the area of Ladeiras do Bibei, D.O. Valdeorras, in north-western Spain, where the Atlantic influence and continental climate shape its distinctive character. It is a red wine with a strong terroir expression, reflecting the complex granite soils and traditional varieties grown on the steep terraces above the river Bibei.
Grape variety: Mencía, Merenzao, Sousón, Godello and Garnacha. Together these varieties give the wine complexity, fruit depth and structural complexity.
Vineyard: The grapes come from 2.5 ha of vineyards in the village of Santa Cruz, where old bush vines grow in poor, shallow granite soils on terraces with a pronounced slope facing north and west. The vineyards are farmed organically, with hand harvesting into small crates and traditional bush-vine training.
Production and ageing: After hand harvesting, spontaneous fermentation takes place with native (indigenous) yeasts. The wine then ages in large wooden foudre vessels, a gentle wood-ageing process that preserves the freshness of the Atlantic influence while giving the wine depth and harmony.
Taste and aroma: The wine presents pure fruit power with tones of red and dark berries, floral and slightly spicy nuances, with an elegant structure, pronounced minerality from the granite soils and a seductive balance between freshness and body depth.
Food pairing: Recommended serving temperature 14–16 °C. Pairs wonderfully with roasted or grilled meat, game, stewed dishes, mushrooms and mature cheeses, highlighting the wine's complexity and harmony of flavours.
