Guímaro, Finca Pombeiras, D.O. Ribeira Sacra, red wine, 0.75l

A blend of 70% Mencía and varieties grown on one of the oldest family farms - Brancellao, Merenzao, Garnacha, Mouratón, Negreda and Sousón. Vines more than 70 years old, with deep slate-granite soils, at an altitude of 350-400 metres, south-facing. After harvesting whole grape clusters, spontaneous fermentation with native yeasts takes place, continuing until the start of malolactic fermentation. After this process is complete, the wine stays for 10-12 months in French oak barrels. This is a red wine that expresses the character of the region's climate and soil. Finca Pombeiras is a bold wine, velvety, with excellent structure and delicate spiciness. The taste brings an explosion of red berries, flowers, hibiscus, peaches and plums, yet it never fully strays from its origin in slate. It will be a great companion to any meat, beef steak, game, mushroom dishes and mature cheeses. We recommend enjoying this expressive wine at a temperature of 16-17 °C; the wine has an ageing potential until 2030.
