Jamón Ibérico de Bellota is the most premium category of cured Spanish hams, made from Iberian pigs fattened on acorns during the montanera season. The range consists of the brands Cinco Jotas (5J), Jamones Blázquez, Montesano, Montellano and Joselito. It includes whole hind legs (jamón) weighing 7-9 kg and ageing for up to 36 months, smaller front legs (paleta) from 4 to 6.5 kg and packaged 70 g slices for immediate consumption without the need for slicing. Prices range from hundreds of crowns for packaged slices to almost 20 000 Kč for a whole bone-in ham from the prestigious Cinco Jotas brand.
How to find your way around this category
The category offers three forms of jamón. The whole bone-in ham (jamón) is the hind leg with the finest meat, suitable for slicing at home and for festive occasions. The paleta is the smaller front leg with a more intense flavour and a lower price. Packaged slices are ready for immediate consumption without the need to slice them yourself.
For a gift or a large celebration, a whole ham with a stand is a good fit, while for ordinary consumption at home packaged slices or a smaller paleta are sufficient.

The ageing of whole legs from premium brands such as Jamones Blázquez or Montesano is around 36 months, which gives the meat a deeper and more complex flavour. You will always find the specific ageing time and weight in the description of the given product.
Storage and serving
A whole bone-in ham is stored hanging on a stand in a dry and cool place, away from direct sunlight, ideally at a room temperature of around 15-20 °C. After each slicing, the cut surface is covered with a slice of fat or a clean cotton cloth so that the meat does not dry out. Packaged slices belong in the fridge once opened and should be consumed within the time stated by the producer on the packaging.
For slicing a whole ham correctly, a long narrow jamón knife and a stable stand (jamonero) are useful - you will find both in the Accessories category.
Frequently asked questions
What is the difference between jamón and paleta?
Jamón is the hind leg of the pig, larger and with a finer, more balanced flavour. The paleta is the front leg, smaller, ages more quickly and has a more intense, more pronounced flavour at a lower price.
Why is Jamón Ibérico de Bellota so expensive?
The pigs are raised on free pasture (dehesa) and in the final phase of fattening they feed exclusively on acorns, which lengthens both the rearing period and the ageing of the ham - commonly up to 36 months - and increases the resulting quality and price.
How long does Jamón Ibérico de Bellota age?
With premium brands such as Jamones Blázquez or Montesano the ageing time is around 36 months, while with other products it may differ - you will find the exact time in the product description.
What does the Joselito brand mean on a jamón?
Joselito is one of the most respected Spanish brands of Iberian ham, popular even among top chefs all over the world.
Is it better to buy packaged slices or a whole ham?
Packaged slices are practical for immediate consumption without the need for slicing. A whole ham is more advantageous over a longer period and for more people, but it requires a stand, a knife and a little experience with slicing.
