White Wine is a category with over 120 Spanish white wines from the regions D.O. Rioja, D.O. Penedès, D.O. Ribera del Duero, D.O. Navarra and D.O. Mallorca. The range combines native varieties such as Xarel.lo, Verdejo or Viura with the international Chardonnay and Sauvignon Blanc. The wines differ in production style - fresh and light versus barrel-aged (fermentado en barrica), which have a fuller body and vanilla notes from the oak. The most distinctive examples come from the producers Artadi, Baigorri, Anima Mundi and Abadía Retuerta. The choice is governed mainly by the food the wine will be served with.
How to find your way around this category
The white wines on offer are divided by region of origin and style of production. Fresh, unaged wines (with no oak contact) have more pronounced acidity and fruitiness, while barrel-aged versions (fermentado en barrica) gain a fuller body and delicate notes of vanilla and bitter almonds.
As a quick rule of thumb: fresh wines with lighter dishes, barrel-aged versions with more complex dishes.

Storage and serving
White wine is served chilled to 8-12 °C, fresher styles rather towards the lower end, fuller barrel-aged wine somewhat warmer. Store an unopened bottle somewhere cool and dark, ideally lying down. Once opened, it usually keeps in the fridge for 2-3 days.
Wine that is too cold loses its aroma - let it warm slightly to the recommended temperature for a few minutes before serving.
