Paella is a subcategory containing 21 products, conceived as a comprehensive offering for preparing this traditional Spanish dish. At its core are the complete Carmencita sets containing a pan, oil and spices - in the basic version, with meat and chorizo, or with squid ink for black paella. They are complemented by Bomba rice from Moli Rafelet, spices on their own (traditional, Valencian, seafood) and dried seafood stock.
How to find your way around this category
Complete sets contain everything you need for your first paella - a pan, oil and spices, some of them rice as well. They are ideal for beginners or as a gift. Spices on their own are useful if you already own a pan and simply want to top up the ingredients - they differ according to the type of paella (traditional, Valencian, seafood). Bomba rice is the essential foundation, which does not fit into any set in larger quantities, so it is often bought separately.
For a first experience with paella, choose a complete set; for regular cooking it is more economical to buy rice and spices separately in a larger pack.

Traditional, Valencian, or seafood?
Valencian paella is the original version of the dish from the Valencia region, traditionally with chicken and rabbit meat and beans. Seafood paella replaces the meat with prawns, mussels and other fruits of the sea, often with the addition of squid ink for its characteristic black colour. The "traditional" Carmencita spice mix is a more universal blend suited to a mixed paella with both meat and seafood.
Dried seafood stock markedly intensifies the flavour of a paella, even if you are using frozen or fresh prawns and mussels without a stock of their own.
Frequently asked questions
What does a complete paella set contain?
The basic set contains a pan, olive oil and spices; some variants additionally include rice, meat/chorizo or squid ink for black paella.
What is the difference between traditional and Valencian spices?
Valencian spices are tuned to the original version of paella with chicken and rabbit meat, while traditional spices are more universal and also suit the mixed or seafood variant.
Why is paella with squid ink black?
Squid ink is added to the rice during cooking and gives the dish its characteristic black colour as well as a gently marine flavour.
Do I have to buy a special pan for paella?
The traditional low, very wide pan (paellera) allows the rice to cook evenly in a thin layer, which matters for the result - which is why the complete sets include one.
How many portions does one pack of spices make?
It depends on the particular product and the weight of the pack - you will find the exact number of portions in the product detail.
