What Binchotan is

Binchotan is traditional Japanese charcoal made by a special method of slowly burning wood at a high temperature, thanks to which it burns longer, more evenly and with less smoke and fewer sparks than ordinary grilling charcoal. It is a popular choice in Japanese cuisine, for example for grilling yakitori or robata, and it is also valued by European chefs for precise temperature control.

Binchotan needs a longer time to catch than ordinary charcoal, but once it starts burning it maintains a stable temperature for a considerably longer time.
