Grape variety:
Los Pasitos is a red wine made from 100% Baboso Negro, a rare indigenous variety from Tenerife, known for its structure, intensity and ability to create complex wines.

Vineyard:
The wine Los Pasitos comes from a single vineyard in the Valle de La Orotava area on Tenerife, belonging to the Suertes del Marqués winery. The vineyard is located at an altitude of approximately 400–600 m, on soil formed of clay and volcanic subsoil, which gives the wine a pronounced minerality. The vines are ungrafted, trained using the Cordón Royat Simple system, and all work is done by hand.

Ageing and production:
Fermentation happens spontaneously using native yeasts in open vessels of approximately 600 litres. The subsequent malolactic fermentation takes place in French oak barrels of various sizes. The wine then ages for 11 months in French oak barrels and is bottled unfiltered, to preserve maximum aromatic expression and structure.

Taste and aroma:
Los Pasitos from Suertes del Marqués is ideally tasted at a temperature of 16–18 °C, ideally after a short decanting, which helps open up its aromatic profile. In the glass, the wine develops gradually. First fresh notes of red fruit appear, mainly raspberries and cherries, then deeper layers of minerality, gentle spice and light earthiness emerge, typical of the volcanic soils of the Valle de La Orotava area. On the palate the wine feels balanced, with pleasant acidity, firmer yet refined tannins, and a medium to long finish. With longer aeration in the glass, delicate herbal and slightly smoky nuances may also appear.

Tasting notes and pairing:
A very versatile wine for pairing. It goes wonderfully with grilled or roasted red meat, such as beef steak, lamb or game, where it highlights the natural flavour of the meat. It also pairs excellently with dishes featuring mushrooms, herbs or slightly smoky elements. Thanks to its freshness and minerality it also works with bolder Mediterranean dishes, tapas or quality charcuterie. Semi-hard and mature cheeses are also a good choice, where the wine balances their richness and highlights their flavour profile.
