Luis Cañas Hiru 3 Racimos is an iconic red wine from Rioja Alavesa, made only in the best vintages and in limited quantities. The name "Hiru" (Basque for "three") refers to the extreme selection. Each vine bears a maximum of three bunches, achieving exceptional concentration and low yields. The wine represents the peak of quality at the Luis Cañas winery and is considered one of the most sought-after Spanish wines.
Grape variety: 90% Tempranillo and 10% Graciano
Vineyard: It comes from an area where the Atlantic and Mediterranean climates meet, and where the Sierra Cantabria mountains protect the vineyards from northern influences. Thanks to the marked temperature differences, ideal conditions arise here for ripening the grapes and creating a deep, structured wine with great potential for laying down. The soils here are stony, limestone-clay.
Ageing and production: Fermentation takes place in oak vats, with a long maceration to extract colour and structure. Malolactic (secondary) fermentation takes place in new barrels. The wine then ages 24 months in new French barriques. After bottling, the wine remains several more months in the bottle, where it continues to develop.
Taste and aroma: Hiru has a deep, almost opaque ruby colour. The nose combines ripe dark fruit (blackberries, mulberries), notes of minerality, liquorice, delicate balsamic nuances, spice, tobacco, coffee and a touch of dark chocolate. The taste is rich, concentrated and yet silky. The tannin is fine and ripe, the acidity balanced, the finish extremely long and complex.
Food pairing: Ideal with roasted lamb, steaks, game, dark sauces and rich dishes of traditional Spanish cuisine. It also pairs wonderfully with matured cheeses and mushroom dishes. Recommended serving temperature: 16–18 °C. We recommend decanting for at least 30–60 minutes before serving.
