Paleta Ibérico de Bellota Cinco Jotas (5J)
Cinco Jotas paleta from the Jabugo (Huelva) region represents the pinnacle among Iberian front legs. It is made from 100% ibérico de Bellota, i.e. purebred Iberian pigs raised free-range. The animals feed exclusively on acorns and natural pasture, which gives the meat an exceptionally rich flavour and a delicate aroma typical of the best bellota.
Ageing of 18–30 months takes place in the mountain drying rooms of Jabugo, where the hot summer and dry air currents create perfect conditions for slow maturation. This gives the paleta a distinctly red colour, fine fat marbling and an incredibly succulent texture. The flavour is intense, elegant and rounded off with notes of dried fruit, which are typical of Cinco Jotas products.
