Paleta Iberica de Bellota is the foreleg from black semi-wild Iberian pigs. Paleta differs from jamón not only in size but also in the flavour of the meat. While jamón is juicier, paleta offers a range of different flavour intensities, and the fat is not infiltrated into the muscle structure in such thin veins. On the finish, paleta is lightly sweet and very delicate. It contains no artificial preservatives or colourings.
The company JOSELITO has more than 150 years of tradition in producing jamón. Today the hams are made exactly as they were by the great-grandfathers of today's makers. The entire production process is under very careful control. Over time it has won fans with its uniqueness not only in Spain. The company owns thousands of hectares of oak groves in the area around Salamanca, where the black semi-wild pigs graze.
The company is almost obsessed with controlling the quality of the pigs' lives. Iberian pigs live as if in the wild, they are happy and have no stress. Each pig has around 3 hectares of land at its disposal.
The acorns they eat contain large amounts of unsaturated fatty acids. These help reduce bad cholesterol. Which is why meat from Iberian pigs is healthy.
How does the ageing process work?
The paletas are salted, but only as much as necessary. That is why Joselito hams are known as pleasantly sweet with a low salt content. During winter the ageing process takes place, helped by the wind. The salt gradually draws water out of the meat. In spring and summer a process occurs that looks as if the jamón is "sweating". Fat is released and penetrates into the tissue. When autumn comes, the paletas are hung in natural cellars located underground. This ensures constant humidity and a constant temperature throughout the ageing process. Thanks to cellars situated in this way, the hams mature very slowly (for a minimum of 24 months).
Selection is carried out by the Maestro Jamonero individually for each jamón/paleta. Only this way can we be sure of its top-class qualities.
Joselito was founded back in 1868 and to this day is among the most respected producers of ibérico hams in the world.
A whole boned Joselito paleta weighs approximately 3 kg. If you prefer a smaller amount, we will also prepare the ham for you in individual portions from 100g upwards. These smaller portions do not come in a gift box. We carefully slice and vacuum-pack the chosen weight so that it retains maximum freshness and flavour.
