Grape variety: A Vilerma is a project by the José Pariente winery outside their home region of Rueda. This wine is made in Ribeiro, in north-western Spain, where they work with local Galician varieties such as treixadura, albariño, godello, loureira, lado and torrontés.

Vineyard and ageing: The wine comes from the A Vilerma vineyard in the Galician region of Ribeiro, planted in 1977 in the Avia river valley. The terraced vineyard, with sandy-clay soil, lies at an altitude of up to 220 m above sea level. Fermentation happens spontaneously, after which the wine ages briefly on fine lees in stainless steel, concrete eggs and used 500 l barriques.

Taste and aroma: The wine's aromatics are fresh and intense. Notes of green apple, citrus, peach and apricot dominate, complemented by floral and herbal nuances. There are also light notes of wet stone and saline minerality. On the palate the wine is well balanced, with lively yet polished acidity and a pleasant freshness that invites another sip.

Food pairing: Thanks to its fresh acidity, mineral notes and elegant structure, it pairs wonderfully with seafood and fish, such as grilled squid, prawns, mussels, or roast pikeperch with herb butter. It also goes beautifully with sea fish carpaccio or sushi. Among cheeses, it shines best with fresh, soft cheeses such as goat's cheese, burrata or ricotta
