Grape variety: 100% Verdejo
Vineyard: The grapes come from organically grown vineyards, some of which were planted as far back as 1924. The vineyards are located in the village of Hornillos de Eresma, on sandy soils that ensure good water retention and stable acidity in the grapes. The wine is produced with minimal intervention and ages on fine lees, which gives it depth and complexity.
Harvest and ageing: The grapes are hand-harvested at night, which guarantees the preservation of aroma in the berries. Key to production are oval-shaped concrete vessels where fermentation takes place. Their specific shape and the temperature differences at various heights within the tanks create currents that make working with the lees easier. They also allow for longer ageing without oxidation. After fermentation in these vessels and ageing on the lees for 11 months, the wine is bottled in July.
Taste and aroma: Cuvée Especial Verdejo is characterised by a light straw-yellow colour with greenish highlights. The aroma is delicate and elegant, with pronounced mineral tones complemented by hints of white fruit and citrus. The taste is complex and velvety, with a return of mineral tones that contribute to a long, pleasant finish.
Food pairing: This wine is ideal with roasted and grilled fish, fish stews, rice dishes, white meats, Iberian ham and cheeses. It is recommended to serve it at a temperature between 7 and 10°C, so that its aromatic and flavour qualities can fully come through.
