Grape variety: Made from 100% Sauvignon Blanc.

Vineyard: The grapes for Apasionado come from vineyards more than 30 years old, considered among the first where Sauvignon Blanc was grown in the Rueda region. The vineyards have been certified organic since 2018 and are located on soils rich in calcium and magnesium, which contributes to the wine's mineral character.

Ageing: After the grapes are harvested, maceration takes place at very low temperatures to preserve the grapes' aromatic components. This is followed by gentle pressing and fermentation in stainless steel tanks. After fermentation, the wine ages for 6 months on fine lees (sur lie), which contributes to its fullness and complexity.

Taste and aroma: Apasionado is characterised by a pale yellow colour with greenish highlights. The aroma is intense, with notes of exotic fruit, freshly cut grass and a subtle mineral hint. Its sweetness is harmoniously balanced by juicy acidity, making it a wine that is pleasant to drink and never feels heavy or cloying. The taste shows pronounced notes of exotic fruit such as mango, pineapple and passion fruit, complemented by a fresh citrus streak in the form of lime or grapefruit. The wine ages on fine lees for six months, which gives it fullness and finesse.

Food pairing: The recommended serving temperature for this wine is around 8-10°C. It goes wonderfully with foie gras, mature cheeses (for example blue cheese), exotic fruit desserts, or as a sophisticated aperitif.
