Ageing: Thanks to natural yeasts, a dark-coloured yellow wine is produced, fermented slowly for six months and aged for a further 15 months before being bottled in February 2016. The grapes are grown at an altitude of 350 to 500 m above sea level on slate subsoil, and are then hand-picked into small 10kg crates in the early morning hours, so as to prevent oxidation. 90% of the grapes are pressed to obtain must, while the remaining 10% of the grapes are macerated for 12 hours before pressing. Fermentation then takes place in oak barrels and vats at a temperature between 16 and 18°C, extended by 4 to 5 weeks.

Taste and aroma: This remarkable wine has a yellow colour, very clean and intense with straw-like hints on the surface. It smells more of stone fruit than of fruit. On the palate you can sense power and elegant spice and the freshness of stone fruit such as cranberries, quince and apricots, accompanied by a nutty touch. You will also notice minerality supported by a lively acidity, which refreshes the structure to let it bloom on the palate, with a deliciously unusual lingering flavour.

Food pairing: We recommend serving at a temperature of 10-12°C. When it matures, even the producer himself, René Barbier, comes to visit this wine and enjoys cheese tapas with it. In short, a complexity that we can appreciate not only with cheeses, but also with foie gras, fish or Asian specialities.
