Pazo de Señorans, Albariño Selección, D.O. Rias Baixas, white wine, 0.75l

A delicate white wine made from the Albariño variety by the Pazo de Señorans winery. It is probably the best wine made from this variety. The grapes come from vineyards over 45 years old, situated 300 metres above sea level with poor sandy soil. They are grown on trellises, so they are protected from soil moisture and the leaves can receive plenty of sunlight. The climate is Atlantic, with mild temperatures and a large amount of rainfall. The harvest is done by hand, followed by fermentation in stainless steel tanks at a temperature of 18°C and maceration. Ageing takes place for 30 months in stainless steel tanks on the lees, followed by a further 12 months in bottle. This delicious wine has greenish highlights, is bright and glossy, with a deep, complex taste made up of notes of ripe apple and stone fruit such as peaches. Grape variety: 100% Albariño Serve at a temperature of  8-10°C. It pairs wonderfully with lighter dishes such as fish dishes, salads, white meat, and is also suitable for desserts.
