Ageing: Thanks to natural yeasts, a deep-coloured yellow wine is produced, fermented slowly for six months and then aged for a further 12 months before being bottled in 2021. The grapes are grown at an altitude of 350 to 500 m above sea level on slate subsoil and are then hand-picked into small 10kg crates during the early morning hours to prevent oxidation. 90% of the grapes are pressed to obtain must, while the remaining 10% are macerated for 12 hours before pressing. Fermentation then takes place in oak barrels and vats at a temperature between 16 and 18 °C, extending over 4 to 5 weeks.

Ageing: 12 months in wooden barrels and 6 months in stainless steel

Grape variety: Garnatxa Blanca and Macabeu

Taste and aroma: This remarkable wine has a yellow colour, very clean and intense, with straw-coloured glints on the surface. It smells more of stone fruit pits than of fruit itself. On the palate you can sense the power and elegance of spice and the freshness of stone fruit such as cranberries, quince and apricots, accompanied by a nutty touch. You will also notice minerality supported by lively acidity, which refreshes the structure so it can unfold on the palate, with a deliciously unusual lingering flavour.

Food pairing: We recommend serving at a temperature of 10-12°C. While it is ageing, even the producer René Barbier himself comes to enjoy this wine with cheese tapas. In short, it is a complexity we can appreciate not only with cheeses, but also with foie gras, fish or Asian specialities.
