Gorka Izagirre, G22, D.O.P. Bizkaiko Txakolina, white wine, 0.75l

This exceptional wine, thanks to the complexity of its flavours, ranks among the best that the Txakoli Gorka Izagirre winery has to offer. Production uses the autochthonous Hondarrabi Zerratia variety, whose grapes are very small and weigh only around 100 grams. The grapes are hand-picked and taken for cryomaceration, which lasts 12 hours. They are then gently pressed. To eliminate the lees, static decantation takes place for 36 hours at a temperature of 10°C. The clean must is then fermented at a very low temperature of 14°C, to preserve the fruity flavour. After 18 days comes ageing on its own yeast lees, which lasts 8 months. The wine is stirred every day to achieve its typical complexity of flavour. The greatest benefit of this wine is its ability to age in the bottle, thanks to which it more slowly loses its freshness and youthfulness. Over five years from bottling it slowly develops and gains exceptional volume, structure and elegance. Grape variety: 100% Hondarrabi Zerratia Aroma: very intense and persistent. At first you notice pear, ripe apple and pink grapefruit. The second level is a little more complex, combining white floral essences with hints of lemon balm, lime blossom, nettle and fennel seeds. The pleasant sense of fruit gives way to flowers and a fragrant essence.  We recommend serving at a temperature of 7-10°C and pairing with white meat, fish, cheeses or various salsas.
