Guímaro, Cepas Viejas, D.O. Ribeira Sacra, white wine, 0.75l

Cepas Viejas comes from vineyards 60 to 70 years old, and fewer than 2,000 bottles of this complex and surprising white wine are produced. Cepas Viejas, in which the Godello variety predominates with a small contribution from the Treixadura and Dona Branca varieties, captures the soul of the Ribeira Sacra region. A fresh and harmonious wine, an ideal recommendation for lovers of Atlantic wines. The wine is cold-macerated for 24 to 30 hours in contact with the skins. It is hand-pressed and the wine is transferred into four 225-litre barrels, two of French oak and two of American oak. Fermentation takes place in these barrels. The wine remains in the same barrels in which it ferments for 8 months. The colour is markedly golden; the wine is unfiltered, so it may appear slightly hazy. The wine is dominated by an aroma of stone fruit and white flowers, which opens up to reveal notes of barrel ageing along with mineral and salty tones. The flavour is intense, complex and fresh, very harmonious. Ideal with delicate mushroom recipes, roasted fish and seafood. The recommended serving temperature is between 7 and 10°C.
