Uixar is made from grapes of the Hondarrabi Zerratia (80%) and Hondarrabi Zuri (20%) varieties, grown on five small vineyards with a total area of just over 3 hectares in the Etxano area in the municipality of Amorebieta. Uixar represents the evolution of txakoli from a fresh wine to a complex, long-lived wine. Low-yield vines grown on steep, south-facing slopes produce small grapes that are carefully processed to extract all of their richness. In making this wine, the Hondarrabi Zerratia variety is left to age using the sur lie method for 3 to 4 months, so that the wine gains richness and length on the palate. After the ageing process is complete, a final blend is made to achieve homogeneity in the wine intended for bottling. A straw-yellow colour with greenish hints; the aroma presents a fresh entry of citrus fruits accompanied by apples and fleshy fruit, all together with elegant white flowers. Full on the palate, refreshing yet round at the same time. Long and persistent, it leaves a light touch of dried fruit and a very well-integrated bitterness.
