AMA is the winery's newest creation. Ama means "mother" in Basque and brings us back to origin, simplicity, elegance and exclusivity. It is a selection of grapes of the Basque Hondarrabi Zerratia variety at an exceptional point of ripeness. With AMA, a new horizon opens in the development of Biscay txakoli. A ripe, delicate and immersive wine with a complexity that surprises as you drink it. During processing, the must was split into two parts, 90% fermented in stainless steel and 10% in new barrels of fine French oak. After two months of ageing using the sur lie method, the resulting wine was blended and aged for 22 months in tank. The colour is deep lemon, clean and bright. Golden hues are a sign of elegance and reveal the wine's ripeness. Medium to high flavour intensity, very delicate, showing white flowers and floral honey. Once the wine breathes for a few seconds, gaseous and stony flavours appear. On the palate the wine is dry, silky and round with a pleasant acidity. The aroma is reminiscent of smoke, yellow melon and caramel, English cream and lemon tree leaves. Grape variety: 100% Hondarrabi Zerratia. Serve at a temperature between 8-10°C.
