Cartago is the most refined cuvée from the García family, representing the pinnacle of their winemaking philosophy and the legacy of the Toro region in its purest form. Mariano García, a legendary oenologist, brings to it his precision, experience and eye for detail, creating a wine breathtaking in both elegance and longevity.

Grape variety: The wine is made from the Tinto de Toro variety (a local clone of Tempranillo).

Origin and vineyard: The wine comes from a single vineyard, "Paraje del Pozo" in Villaester, planted on sandy, very poor soils, at an altitude of over 700 m above sea level. The vines are more than 45 years old and the yield is very low (approx. 2,500 kg/ha).

Ageing and production: The grapes are hand-picked, fermentation takes place using native yeasts, often over 15 days. The wine then ages for 30-35 months in French and American oak barrels, both new and used, of various sizes.

Taste and aroma: Cartago shows an intense aroma of ripe black fruit, spice and delicate mineral notes. On the palate it is full, structured and elegant, with firm tannins and a long, harmonious finish. The wine combines power and finesse, making it the perfect choice for discerning lovers of complex red wines.

Food pairing: San Román wine is best enjoyed at a temperature of 16-18 °C and it is recommended to decant it for at least one hour, so that its aroma and structure can fully open up. Thanks to its depth and power, it pairs excellently with game, grilled red meats, gently mature cheeses, as well as roast lamb or venison.
