Grape variety: 80% Tempranillo and 20% Cabernet Sauvignon
Vineyard: The vines grow on limestone, gravel and sandy soils at an altitude of around 800 m. The vineyards are organically farmed, with high planting density and low yields, which guarantees exceptional quality and expression of terroir.
Ageing: The wine aged for 18–20 months in barrels made from French Allier oak, of which approximately 30-40% were new barrels, with the rest two to three years old.
Taste and aroma: The colour is deep ruby to garnet, vivid and bright. The nose is captivated by black fruit (plum, blackcurrant), mineral notes and delicate nuances of liquorice, tobacco or mint. The flavour is structured and elegant, with balanced tannins, intense fruitiness and a long finish with spiced notes and mineral elegance.
Food pairing: Goes wonderfully with red meats, game, mature cheeses, quality charcuterie and mushroom dishes. It pairs excellently with beef steak, wild boar ragout, Iberian ham or truffle risotto. We recommend serving at a temperature of approximately 16–18 °C.
