4Kilos, Grimalt Caballero, D.O.Mallorca, red wine, 0.75l

4 Kilos Grimalt Caballero is a premium red wine from the winery of the same name, based in the town of Felanitx, Mallorca. The wine bears the names of the winery's founders and is made from grapes of the native Callet and Fogoneu varieties, which grow on clay-loam soils with a high iron content, giving the wine its characteristic complexity. The Callet grapes come from the oldest vines in a small vineyard. They are hand-picked and hand-sorted, followed by fermentation in stainless steel tanks and wooden vats at a temperature of between 20 and 30 °C, after which the wine is aged in Allier barrique barrels for 14 months. The result is a premium-quality wine, produced with minimal intervention - here the winemakers followed the motto "less is more". The aroma brings notes of berries, honey, liquorice with a slight hint of vanilla and orange wood. The taste is balanced with a pleasant bitterness, warm with sweet tannins, full, pleasant to drink, and with a long finish in which pepper and honey return.  We recommend serving the wine at a temperature of 16 °C and decanting before serving. It pairs wonderfully with game, beef, lamb and pasta. The 4 Kilos winery is located in the town of Felanitx, and its name comes from the colloquial expression for 4 million pesetas - the amount that Francesc Grimalt and Sergio Caballero invested at the outset to found the winery. It was a modest investment, proving that good wine does not need money so much as passion and determination. At the 4 Kilos winery, they focus on rational farming that is as environmentally friendly as possible and has minimal impact on the surrounding landscape. They use native vegetation with a rich microbiological population to ensure great biodiversity in the vineyard. This results in wines of outstanding quality, reflecting honest work, a specific climate and a love of the craft.
