Origin and vineyard: The wine comes from D.O. Toro in Spain, from a small, old vineyard called Pago de Los Almendros, covering 1.4 ha, planted in 1964 in the village of Villaester. The vineyard is located at an altitude of approximately 710 m, on sandy to stony soils with a clay subsoil, which ensure a good water supply in demanding climatic conditions. All the vineyards are farmed organically and are gradually transitioning to biodynamics.
Ageing: The grapes are hand-picked and undergo a double selection, both in the field and on the sorting table after transport, followed by spontaneous fermentation (with yeasts naturally present on the grapes) and gentle hand-crushing of the berries. The wine is aged for 19–20 months in barrique barrels of approximately 500 l made of French and American oak, of which about 30% of the barrels are new.
Taste and aroma: The aroma is dominated by notes of red fruit and flowers, complemented by a delicate herbal and mineral trace. On the palate, the wine is fresh and opulent at the same time. Full-bodied with light tannins that do not overwhelm the wine. The overall impression is very juicy, with a unique combination of intensity and finesse.
Tasting notes: San Román Garnacha is a wine that pairs beautifully with sophisticated as well as traditional dishes. It is recommended to serve it at 16–18 °C, ideally after decanting. It goes well with roast lamb, game, grilled dishes, seasonal ragouts and matured cheeses such as Manchego or Zamorano.
