San Román is the flagship wine of the García family and serves as the second chapter of their winemaking philosophy (after Bodegas Mauro). Grape variety: The wine is made from 100% Tinta de Toro (a local clone of the Tempranillo variety).
Origin and vineyard: The wine comes from the D.O. Toro region in Spain, from ecologically managed vineyards covering approximately 140 hectares, which are gradually being converted to biodynamic farming. The vineyards, on average around 45 years old, are located in an area with an extreme continental climate and rich biodiversity. The soils are predominantly stony and sandy with a clay subsoil, which supports deep rooting and adaptation to drought.
Production and ageing: San Román is made from carefully sorted grapes from various vineyards in the D.O. Toro region, which are vinified separately to highlight the specific characteristics of the terroir. Fermentation takes place spontaneously using native yeasts, without accelerating the processes. The wine ages for 24 months in a combination of French and American oak barrels of various sizes and ages. The use of both new and several-times-used barrels contributes to a harmonious combination of fruity character with a delicate touch of wood. The wine is not filtered, so as to preserve its fullness, depth and long ageing potential in the bottle.
Taste and aroma: The aroma is complex and rich, dominated by dark fruit, oriental spice, hints of cedar, toffee and mineral notes. On the palate the wine is elegant and structured, combining power with finesse, with ripe tannins, a pronounced texture and a long fruity-spicy finish.
Food pairing: San Román is best enjoyed at a temperature of 16–18°C and it is recommended to decant it for at least one hour, so that its aroma and structure can fully open up. Thanks to its depth and power, it pairs wonderfully with game, grilled red meats, semi-mature cheeses, as well as roast lamb or game.
