Pago El Espino from the Cortijo Los Aguilares winery is an elegant red wine created as a cuvée of Petit Verdot (74%), Syrah (15%) and Tempranillo (11%) from vineyards in the mountainous Serranía de Ronda area (D.O. Sierras de Málaga) at an altitude of around 900 metres, where marked differences between day and night temperatures preserve the freshness and complexity of the grapes.
After careful fermentation the wine ages for 15 months in French oak, giving it depth, a subtle structure and a harmony of wood with its fruity character.
The nose is dominated by dark fruit, blackberries and blackcurrant, complemented by spicy, herbal and balsamic notes, while on the palate it is full, juicy and well structured with a long, elegant finish. It is ideally served at 16–18 °C and pairs excellently with grilled meat, lamb, game or mature cheeses.

Vineyard:
The grapes come from vineyards in the Serranía de Ronda area (D.O. Sierras de Málaga) at an altitude of around 900 metres. This mountainous environment, combined with a Mediterranean climate, creates marked differences between day and night temperatures, which helps preserve freshness and aromatic complexity. The vineyards are managed with respect for nature and an emphasis on low yields and high-quality grapes.
Production and ageing:
After careful selection of the grapes, fermentation takes place at a controlled temperature of around 28 °C. Malolactic fermentation takes place in both concrete tanks and oak barrels. The wine then ages for approximately 15 months in French oak barrels of various sizes (225–300 l), with some of the barrels being older, so as to preserve as pure a fruit character as possible and prevent the wood from dominating.
Taste and aroma:
The wine offers a complex aromatic profile with notes of dark fruit, such as blackcurrant, blackberries and plums, complemented by spicy, herbal and balsamic nuances. Subtle notes of toast, cocoa or cedar appear from ageing in oak. On the palate it is full, juicy and fresh, with a firm structure, balanced acidity and a long, elegant finish with a mineral touch.
Food pairing:
Thanks to its complexity and structure it pairs beautifully with more robust dishes. It is ideal with grilled beef, lamb, game or slow-cooked meats. It also pairs excellently with Mediterranean cuisine, ragouts or mature and pronounced cheeses. The ideal serving temperature is 16–18 °C, and it may be helpful to decant the wine briefly so it fully opens up and develops its aroma.
