Cortijo Los Aguilares Garnacha is a distinctive red wine from the Spanish area of Serranía de Ronda (D.O. Sierras de Málaga), where the vineyards lie at an altitude of around 900 metres and benefit from pronounced day-night temperature differences.
The wine is made from 100% Garnacha, with the grapes harvested in two passes to achieve optimal ripeness and fermented at a controlled temperature. The wine then ages for 12 months in French oak, which gives it structure and elegance.
The result is a fresh yet complex wine with typical notes of red fruit, gentle spiciness and a balanced acidity, reflecting the unique mountain-Mediterranean terroir of the area.

Vineyard:
The grapes come from vineyards in the area of Serranía de Ronda in Andalusia (D.O. Sierras de Málaga), situated at an altitude of around 900 metres above sea level. The combination of Mediterranean climate and pronounced day-night temperature differences, together with higher winter rainfall, creates ideal conditions for a slow, even ripening of the grapes, which is reflected in the wine's complexity and freshness.
Production and ageing:
The harvest takes place in two passes to achieve optimal grape ripeness. This is followed by alcoholic fermentation at a controlled temperature, while malolactic fermentation takes place in oak barrels. The wine then ages for 12 months in French oak barrels of various sizes, which gives it structure and a subtle interplay with the wood.
Aroma and taste:
The wine offers an authentic and distinctive expression of high-altitude Garnacha. It is typically characterised by notes of red fruit (cherries, forest berries), complemented by delicate herbal and slightly balsamic nuances. On the palate it is fresh, with a balanced acidity, fine tannins and an elegant structure with a longer finish.
Food pairing:
Thanks to its freshness and fine tannins it pairs beautifully with roasted and grilled meats (lamb, beef), Mediterranean cuisine, tapas or mature cheeses. It also goes well with herb-based dishes and lightly spiced meat preparations.
Thanks to the vineyards' higher altitude and the natural freshness of the Garnacha variety, the wine shows best served lightly chilled at around 14°C. This brings out the fruitiness, elegance and fine tannin structure. If the wine is too warm, it can seem heavier and lose its freshness.
