Pinot Noir from the Cortijo Los Aguilares winery is an elegant and aromatic red wine made from 100% Pinot Noir grapes from vineyards in the Serranía de Ronda area (D.O. Sierras de Málaga) at an altitude of around 900 m, where marked differences between day and night temperatures support slow, even ripening.
After careful fermentation the wine ages for approximately 8 months in French oak barrels and concrete tanks, giving it a subtle structure in harmony with its fruity character.
The nose is dominated by red fruit, especially cherries and raspberries, complemented by floral and herbal nuances; on the palate it is fresh, with smooth tannins and a long, elegant finish.
It is ideally served at 14–16 °C and pairs beautifully with roast poultry, mushroom dishes or light cheeses.






Grape variety:
The wine is made from 100% Pinot Noir, an elegant and aromatic red variety which, in the climatic conditions of the high-altitude vineyards around Ronda, gains an unusual depth and purity of expression.
Vineyard:
The grapes come from vineyards in the Serranía de Ronda area (D.O. Sierras de Málaga) at an altitude of around 900 m, where marked differences between day and night temperatures support slow, even ripening of the Pinot Noir. The soils are calcareous clay and the terroir gives the wine fresh acidity as well as the characteristic minerality typical of this small but exceptional Spanish vineyard.
Production and ageing:
After hand-harvesting the grapes, fermentation takes place at a controlled temperature (approx. 25 °C), followed by malolactic fermentation in concrete and stainless steel tanks. The wine ages for 8 months in French oak barrels and an ovoid concrete tank, which helps balance the variety's subtle aromatic notes with texture and structure without excessive woody influence.
Taste and aroma:
Pinot Noir is characterised by a pure aromatic profile with notes of red fruit (cherries, raspberries) and subtle floral and herbal nuances, with a discreet integration of wood. On the palate the wine is fresh, with excellent acidity, smooth and elegant tannins and a long, harmonious finish typical of quality expressions of this variety grown at altitude.
Food pairing:
Thanks to its elegance and freshness it is ideal with more delicate meats (such as roast poultry or veal), mushroom dishes, fish with a stronger flavour, or Mediterranean cuisine with herbs. It also suits milder cheeses and a lighter tapas menu. Pinot Noir is served at 14–16 °C, to highlight its fresh acidity and delicate fruity aroma.
