Cortijo Los Aguilares Tadeo is a bold red wine from the Serranía de Ronda region in southern Spain, made from 100% Petit Verdot, which achieves exceptional quality here thanks to the high altitude and specific climate.
The wine is characterised by a full body, structure and a complex aromatic profile with notes of dark fruit, spice and subtle minerality, supported by ageing in French oak barrels.
Tadeo is one of the winery's flagship wines and has consistently received high scores from critics, confirming both its quality and its ageing potential.

Vineyard:
The grapes come from the winery's own vineyards in the Serranía de Ronda (Málaga) region, planted as far back as 1999. The vineyards lie at an altitude of around 900 metres above sea level on clay-limestone soils, which support the wine's minerality and freshness.
Production and ageing:
After hand harvesting, fermentation takes place at a controlled temperature, and the wine then undergoes malolactic fermentation in concrete vats and partly in oak barrels. The wine then ages for approximately 14–15 months in French oak barrels (225–300 l), which helps soften its pronounced tannins and add complexity.
Aroma and taste:
The wine has an intense and complex aromatic profile dominated by ripe dark fruit (black plums, blackberries), complemented by spicy notes (pepper), balsamic nuances and subtle minerality. On the palate the wine is full-bodied, concentrated and structured, with pronounced yet well-rounded tannins and balanced acidity. The long finish is elegant, lightly mineral and spicy, underlining the character of both the Petit Verdot variety and the local terroir.
Food pairing:
The wine goes wonderfully with red meat, game, roasted and grilled dishes, as well as mature cheeses or richer dishes with sauces. Thanks to its structure and tannins, it also pairs well with richer, fattier dishes.
The name Tadeo is no coincidence. The wine is named after Tadeo Itarte, the son of the winery's owners, the family behind the Cortijo Los Aguilares winery. With this name they wanted to express a personal connection to the wine and the family character of the project.
