The wine is characterised by a lively ruby colour, complex fruity notes of red fruit, such as strawberries and cherries, with delicate spicy and floral hints. On the palate it is balanced, with fresh tannins and a long, harmonious finish. Thanks to ageing in oak barrels, it retains its freshness while also gaining deeper layers and structure.

Vineyard: The wine Pasos de San Martín comes from the cooler area of San Martín de Unx, where there are 11 hectares of 40-year-old vineyards on southeast-facing slopes at an altitude of 500 metres above sea level. These vineyards grow on soils rich in limestone and clay. The climate of this area is typically Pyrenean, meaning it is cool practically all year round.
Ageing: it ages in oak barrels for approximately 6 to 9 months. This process allows the wine to develop delicate woody and spicy notes without losing its freshness and fruitiness.
Taste and aroma: characterised by a bright ruby-red colour with a lively and clear appearance. The aroma offers rich notes of red fruit, such as strawberries and redcurrants, complemented by hints of blueberries, candied fruit, herbs and delicate floral nuances. The taste is energetic and fruity with delicate and fresh tannins, which speaks to the power and authenticity of this wine.
Tasting notes: it is best served at a temperature of 16–18°C and pairs wonderfully with dishes such as game, lamb or pork with delicate sauces.
