Production: This vermouth is made from quality white wine, usually the Macabeo variety, which, thanks to its neutral flavour and balanced acidity, forms an ideal base for a dry vermouth. A mixture of more than 80 herbs, spices and citrus peels is added to the wine - for example wormwood, thyme, aniseed, sage or coriander. These ingredients are cold-macerated for several weeks, so that their aroma is gently extracted without unwanted bitterness or excessive colouring. After maceration, a neutral wine distillate is added to the mixture, increasing the alcohol content. The vermouth then ages for 12 months in bocoy-type oak barrels, where it takes on subtle tones of wood and spice and all the flavour components harmoniously combine. It is then gently filtered and bottled without the addition of caramel, so it retains its natural straw-yellow colour and dry, elegant character.

Taste and aroma: An elegant and complex aroma, in which tones of dried herbs, spice, citrus peel and light oak wood intertwine. On the palate it is dry, harmonious and balanced. A subtle sweetness quickly gives way to herbal bitterness with tones of aniseed, thyme and pepper, supported by a pleasant acidity.

Tasting notes: An ideal choice as a sophisticated aperitif or base for classic cocktails, especially a dry Martini. It pairs wonderfully with seafood dishes, fresh oysters, white fish, delicate pâtés or mature hard cheeses. It also goes excellently with roasted almonds, olives and delicate tapas, where its dry, herbal character pleasantly balances the flavour of the food.
