Production: This vermouth is made from quality white wine, usually the Macabeo variety, which, thanks to its neutral flavour and balanced acidity, forms an ideal base for a dry vermouth. A mixture of more than 80 herbs, spices and citrus peels is added to the wine - for example wormwood, thyme, aniseed, sage or coriander. These ingredients are cold-macerated for several weeks, so that their aroma is gently extracted without unwanted bitterness or excessive colouring. After maceration, a neutral wine distillate is added to the mixture, increasing the alcohol content. The vermouth then ages for 12 months in bocoy-type oak barrels, where it takes on subtle tones of wood and spice and all the flavour components harmoniously combine. It is then gently filtered and bottled without the addition of caramel, so it retains its natural straw-yellow colour and dry, elegant character.

Taste and aroma: A rich and elegant white vermouth with a pronounced aromatic profile and subtle sweetness. The nose is dominated by a blend of floral tones, spice and Mediterranean herbs, complemented by delicate hints of vanilla, white pepper, cinnamon and citrus peel. On the palate it is harmonious, gently sweet and rounded, with a well-balanced ratio of herbal bitterness, acidity and sweetness.

Tasting notes: An elegant vermouth suited as an aperitif as well as with tapas, fish, delicate cheeses and light meats. It pairs wonderfully with olives, chorizo, seafood, chicken or risotto, and also goes well with almond or lemon desserts.
