Production: Yzaguirre Rojo Vermouth is made using a traditional method with an emphasis on quality and care. Its base is white wine, predominantly from the Macabeo variety, which is blended with a secret mixture of more than 80 kinds of herbs, spices, flowers and plants. This mixture is cooked in a double boiler for 14 hours, extracting the aromatic substances. This is followed by a two-month cold maceration with daily stirring, allowing the full release of the essences. It ages for 12 months in oak barrels, which gives it depth and character. White sugar, molasses alcohol and caramel are then added, giving the drink its characteristic red colour. Finally, the vermouth is gently filtered, clarified and bottled in glass bottles.
Taste and aroma: It has a rich and elegant flavour profile. On the nose you will notice distinct tones of aromatic herbs, spice and delicate oak wood, reminiscent of ripe fruit, dried plums and orange peel. On the palate it is smooth and harmonious, starting with a subtle sweetness, moving into herbal bitterness and ending with a long, warm finish with a hint of spice, vanilla and light woodiness. Thanks to a year of ageing in oak barrels, it is overall complex, rounded and very well balanced.
Tasting notes: Ideal as an aperitif or evening drink. Pairs wonderfully with meat or game stews, seafood paella or desserts and pastries. This drink also goes great with tinned seafood or crisps.
