4Kilos, D.O.Mallorca, red wine, 0.75l

4 Kilos is a delicious red wine from the winery of the same name on Mallorca. The Callet grapes come from vineyards aged 20 to 45 years in the southern and northern parts of the island. They are picked and sorted entirely by hand, followed by fermentation in stainless steel tanks and wooden vats at a temperature of between 20 and 30 °C, and then the wine ages in Allier barrique barrels for 12 months. The result is a first-class wine of medium body and good acidity, giving it a fresh, lingering character on the palate. In short, a faithful embodiment of the Callet variety. We recommend serving the wine at a temperature of 16 °C and decanting before serving. It goes wonderfully with game, beef, lamb and mature cheeses.  The 4 Kilos winery is located in the town of Felanitx, and its name comes from the colloquial expression for 4 million pesetas. That was in fact the amount that Francesc Grimalt and Sergio Caballero originally invested to found the winery. It was a modest investment, proving that good wine does not need money, but above all passion and determination. At 4 Kilos, they focus on rational farming that is as environmentally friendly as possible and has minimal impact on the surrounding landscape. They use native vegetation with a large microbial population to ensure great biodiversity in the vineyard. This results in wines of outstanding quality, in which honest work, the specific climate and a love of the craft are reflected.
