Dominio de Atauta winery Dominio de Atauta is a winery located in the Soriano valley, an area of great ethnographic value and long winemaking tradition. From an altitude of more than 1000 metres, the winery's aim is to showcase the full potential of pre-phylloxera Tinto Fino vines in a valley with more than five hundred years of winemaking tradition and extremely harsh conditions - high altitude, lack of rainfall and large thermal swings. Despite its small size, this is a valley with great diversity of soils, both in composition and depth, with one common feature: limestone rock. Intense minerality, slow ripening caused by the altitude, and strong winds that keep the grapes in perfect health make the valley an ideal place to grow grapes of the very best quality. The vines coexist in harmony with the beautiful natural surroundings of oaks, aromatic herbs and animals such as hares, roe deer, wild boar and eagles. The predominant variety across the more than 500 micro-plots that the winery owns throughout the valley is, of course, red Fino. Vineyard work is always based on organic and biodynamic principles, seeking maximum respect for the environment, which is why it is always carried out by hand. The only fertiliser used is compost of animal and plant origin. Yields are very low, a maximum of 2500 kg/ha, which means that each vine produces a slightly smaller quantity of grapes than is needed to make a 0.75l bottle.
