Anima Mundi, Xarello, D.O. Penedès, white wine, 0.75l

The Anima Mundi winery comes with a very conservative ideology in its approach to winemaking. Maximum respect for the vineyards, which are what give the wines their character. Minimal, or rather no, intervention in the wine, and above all the aim of making "honest" wines. The most important step is to take nature into account, which, in their conviction, is best expressed without any intervention, when we simply let it act. With this is naturally connected the need to learn to observe and understand everything around us in nature, with the aim of preserving the true character of the vineyards. The intention is to understand the grapes as a true expression of the soil in which they are born. The wine undergoes maceration for 8 hours with its own skins in old 500L oak barrels and a concrete amphora. It then ages for 6 months with its own yeasts. Nothing is done to the wine until the moment of bottling. Only the autochthonous Xarel·lo variety is used, planted in the local vineyards in Sant Sebastià dels Gorgs in the Alt Penedès region in 1978. The plot faces north. The soil is extremely calcareous with a balanced subsoil (stones, clay, sand). The wine's cultivation follows the principles of biodynamic winemaking and lunar cycles. The result is a white wine of a beautiful yellowish colour. Both the aroma and taste are deliciously fruity. The wine has a very gentle acidity.
