Grape variety: The wine is made from 100% Albillo Mayor, a traditional white variety typical of the Ribera del Duero region, which gives the wine freshness, delicate texture and an impressive aromatic complexity.

Vineyard: The grapes come from vineyards around 20 years old, located at an altitude of about 930-935 m above sea level on limestone and stony soils around the village of Gumiel de Mercado. These nutrient-poor conditions and considerable altitude allow the wine to achieve pronounced minerality and structure.

Production and ageing: After hand-picking, maceration follows for 15 days at a controlled temperature. The wine then ages for 12 months in barrique barrels and subsequently 12 months in bottle before being released to market. This process highlights its elegance and depth.

Taste and aroma: Visually the wine has a straw-yellow colour with greenish hints and a clean, bright appearance. The aromatic profile is dominated by pear, ripe apple, apricot and peach, accompanied by mineral notes and a subtle balsamic touch reminiscent of thyme or lemon. On the palate it is fresh, with high acidity, a round mid-palate and a long finish with notes of ripe fruit and delicate minerality.

Food pairing: The wine is remarkably versatile. It pairs wonderfully with pasta, semi-hard cheeses, salted and smoked fish, aromatic rice dishes, and grilled fish such as turbot. We recommend serving at a temperature around 8-10°C with light starters or as an accompaniment to seafood during elegant gatherings.
