The white wine Quíbia has a pleasant straw-lemon colour with green tinges. The aroma combines peaches, pears, nuts and jasmine. On the palate the wine is full, with a texture of silky olive oil and a concentrated flavour of ripe peaches, pears and capers. Sharp, lively and well balanced. This wine pairs beautifully with seafood - mussels, seafood, crayfish, mussels and paella with seafood. Also excellent with sushi and jamón. Serve at a temperature of 8°C to 10°C. Grape variety: Prensal Blanc, Giró Ros, Callet The Ànima Negra winery from Mallorca was founded by three friends, Francesc Grimalt, Pere Obrador and Miguel Ángel Cerdà. They decided to make authentic wines from Mallorca based on autochthonous varieties. Near the town of Felanitx they converted a former dairy into what is today one of the best-known wine cellars in the Balearic Islands. In the first year they produced only two barrique barrels of the local Callet variety. The following two years served them as a de facto study project - they tried to produce, for themselves, the ideal, well-structured wine from this typical Mallorcan variety. Most wines from Mallorca at that time were simple and did not undergo any sophisticated ageing process. The vineyards in the Son Negre area of Mallorca are characterised by a very windy environment (sea air), small production (less than half a kilogram of grapes per vine) and an extreme terroir: very poor soil, considerable minerality, small water reserves in the soil, and many other fruit trees in the vineyard. The specific conditions of this vineyard force the winemakers to work with old vines, which have deep roots to find the nutrients they need. This means the winery's production is very small and at the same time complex. Today Anima Negra works mainly with autochthonous varieties such as Callet, Manto Negro, Prensal Blanc, Giro Ros, etc. Country of origin: Spain, Mallorca
