Viňedos Ponce, La Casilla, D.O. Manchuela, red wine, 0.75l

La Casilla is a distinctive red wine made from 100% Bobal from the family winery Bodegas y Viñedos Ponce in the Manchuela region. The grapes come from vineyards 35–70 years old, planted on clay-limestone soil, where the continental climate, with hot days, cold nights and low humidity, allows for slow ripening and intense colouring of the grapes.

Grape variety: 100% Bobal, the traditional red variety of Manchuela, known for its fruity profile and fresh acidity.

Ageing and production: The wine ages 10 months in 600-litre barrels, fermentation takes place with natural yeasts, and the wine is bottled unfiltered and unfined, so as to preserve its distinctiveness and authentic character. Total production is 10,000 bottles.

Vineyard: The grapes come from carefully tended plots Casilla, Costera and Tabla at an altitude of 600–700 m, where the terroir gives the wine a mineral tone and precise structure.

Tasting notes: The wine has a clear ruby colour, the aroma offers red fruit with delicate spicy and herbal notes. On the palate it is harmonious, fresh and well structured, with a long finish that reflects the terroir and the winemaker's careful work.

Food pairing: It goes well with delicate cheeses such as manchego semicurado, Idiazabal natural or the cow's milk cheese La Pasiega, white meat, charcuterie or Mediterranean cuisine, where it enhances the flavours of the dishes with its fruity liveliness and fresh acidity.

Awards: The wine received 93 points from Robert Parker, confirming its quality and distinctive character among the red wines of the La Manchuela region.
