The wine has a bright, glistening cherry colour. The aroma is very intense, dominated by floral and fruity notes with light hints of various spices. On the palate it is very delicate, lively and velvety. In the mouth it is broad, fresh and harmonious, with fine, well-integrated tannins and a pleasant touch of acidity, which gives the wine liveliness and drinkability.
After malolactic fermentation, Pago de los Capellanes Roble rests for 5 months in new French barrique barrels.






Pago de los Capellanes Joven Roble comes from the prestigious Spanish winery Pago de los Capellanes, based in the heart of D.O. Ribera del Duero in the town of Pedrosa de Duero (province of Burgos). The winery is known for its emphasis on quality, a traditional approach to grape growing and the sensitive use of barrel ageing, which is also reflected in this wine.
Awards: Pago de los Capellanes Joven Roble is one of the best-rated young roble wines from the Ribera del Duero region and has been recommended by expert critics (e.g. high scores from Decanter and Tim Atkin in selected vintages).
Grape variety: 100% Tempranillo (Tinto Fino), from selected vineyards averaging around 25 years of age around Pedrosa de Duero, La Horra and Gumiel del Mercado.
Vineyard: The vines grow on clay-limestone, stony soils with low fertility, which promotes concentration of flavour and the typical vitality of this wine.
Production and ageing: After a brief cold pre-fermentation maceration, controlled fermentation takes place using selected yeasts in stainless steel tanks, followed by spontaneous malolactic fermentation. The wine then ages for around 5 months in 300 l French oak barrels, which give it finesse and structural balance without overpowering its fruit expression.
Taste and aroma: The wine presents a pure, intense colour with a bright red hue. On the nose it offers intense aromas of red and black fruit (redcurrant, mulberry, plum) complemented by floral notes and subtle spicy accents (vanilla, spice) from barrel ageing. On the palate it is broad, fresh and harmonious, with fine, well-integrated tannins and a pleasant touch of acidity, which gives the wine liveliness and drinkability.
Food pairing: Ideally served at a temperature of 14–16 °C. It goes wonderfully with tapas, grilled meats, cheeses, Mediterranean dishes, paella, cold charcuterie or vegetable dishes. With its freshness and fruity character, the wine works both with lighter dishes and as a versatile companion for social occasions.
