 It is ideal for cocktails, because with a more pronounced dose of bitterness and less sugar it can transform a good few popular cocktails. Rojo Amargo is created through an initial infusion of mountain plants with small roots and highly aromatic flowers. The vermouth then rests for two years in chestnut barrels, which gently absorb the aroma, and once the ageing process is complete, a second herbal blend is added, made up of a combination of plant bark and roots from the area around the winery, giving the vermouth more character and bitterness. Nose: A delicate aroma of ripe orange peel with a gentle hint of cinnamon gives way to balsamic tones of clove and dried fruit, such as apricot. Palate: Smooth and full on the palate with fresh sensations of orange, followed by a wonderfully bitter flavour that is round, intense and reminiscent of tobacco, cinchona bark and honeyed caramel.
