Anima Mundi, Cami Del Xops, D.O. Penedes, white sparkling wine, 0.75l

Cami del Xops is an excellent sparkling wine made from the Macabeu and Xarel-lo varieties using the méthode ancestrale, produced by the Anima Mundi winery in the Penedès region. The vineyards lie on clay and calcareous soils at an altitude of 180 to 260 metres above sea level, and lunar cycles and the principles of organic farming are respected in both growing and winemaking.  A wine that is pressed directly without destemming and then left to ferment spontaneously in barrique barrels with a capacity of 225 l. It is made using the old method known as méthode ancestrale, whereby the ripe wine with residual sugar is bottled before fermentation is complete, and a second fermentation takes place in the bottle without the addition of any sugar or liqueur. It is a clean wine, characterised by a bright straw colour with golden glints and fine bubbles. On the nose it is clean and elegant, with an aroma of apples, pears and fennel dominating against a background of delicate pastry. On the palate it is persistent, fresh, elegant and very fruity. A unique wine, produced in a limited quantity of 4,120 bottles. This wine pairs beautifully with any starter, pickled dishes, seafood or fish. Anima Mundi is a relatively new project founded by Agustí Torelló Roca as part of the well-known family winery AT Roca. Following the philosophy instilled in him by his father Agustí Torelló Sibill, it strives for the maximum expression of the environment through minimal intervention and maximum biodiversity. The result is a collection of biodynamic and natural wines without added sulphur, which are a pure reflection of the Penedès region.
