Anima Mundi, Noguer Baix, D.O. Penedès, white sparkling wine, 0.75l

Noguer Baix is an outstanding sparkling wine of the Macabeu variety, coming from the Catalan Penedès region. The vineyards, planted in 1974, lie on clay and calcareous soils facing north, and lunar cycles and the principles of organic farming are respected in both growing and winemaking.  The sparkling wine is made using the méthode ancestrale, pressed directly without destemming and then left to ferment spontaneously in clay amphorae with a capacity of 600 l.  It is a clean and elegant wine, characterised by a bright straw colour with golden glints. On the nose fruity aromas dominate, with apples, pears and fennel standing out against a background of delicate pastry. On the palate it is persistent, fresh, elegant and very fruity. A unique wine, produced in a limited quantity of 2,148 bottles. Noguer Baix pairs well with starters, fish and seafood. Anima Mundi is a relatively new project founded by Agustí Torelló Roca as part of the well-known family winery AT Roca. Following the philosophy instilled in him by his father Agustí Torelló Sibill, it strives for the maximum expression of the environment through minimal intervention and maximum biodiversity. The result is a collection of biodynamic and natural wines without added sulphur, which are a pure reflection of the Penedès region.
