It is ideal for food pairing with roasted meat, lamb or mature cheeses, but also for enjoying on its own as a gourmet experience.

Grape variety: The main component is Tempranillo, complemented by minor varieties such as Syrah, Cabernet Sauvignon and Graciano, which add complexity, finesse and intensity to the wine.
Vineyard:
Mauro wines come from organically and ecologically farmed vineyards in the Tudela del Duero area, where limestone-clay soil provides optimal conditions for the growth of quality Tempranillo vines as well as the complementary varieties, such as Syrah, Cabernet Sauvignon and Graciano. The vineyards have an average age of around 35 years and are low-yielding, which ensures a high concentration of aromas and complexity in the grapes. The whole process involves manual work and careful berry selection, so that the wine best expresses the terroir of the Ribera del Duero region.
Ageing:
Fermentation takes place using natural yeasts, and the wine then ages for approximately 16 months in a combination of French oak barrels and large foudres, which gives the wine delicate woody complexity and structure, without suppressing its natural fruitiness.
Mauro 2017 is characterised by a more challenging vintage with cooler and rainier weather. This makes the wine more elegant and balanced, with a gentler fruit expression and firmer tannin structure. It has greater complexity and often requires longer cellaring for its potential to fully open up.
Mauro 2022, by contrast, grew in a warmer and drier year, which gave it a fuller body, more pronounced fruit aroma and a livelier expression. The tannins are smooth and well integrated, the wine is more approachable at a younger age, while still retaining the ability to age long-term. Aromatically it is rich and energetic, with pronounced notes of dark fruit and delicate spice.
Taste and aroma:
Mauro 2017 offers a complex and elegant aromatic profile. The aroma opens with deep notes of dark fruit, ripe plums, cherries and blackberries, complemented by delicate floral accents reminiscent of violets and dried herbs. Notes of noble wood, spice, chocolate and delicate tobacco aroma gradually develop, adding depth and sophistication to the wine. On the palate the wine is full, structured and harmonious, with firm, well-matured tannins and fresh yet elegant acidity, which lends liveliness and balance. The finish is long, gradually opening, with a mineral touch and a delicate, sweet fruity echo.
This vintage feels balanced and noble, with the potential to age for decades.
Mauro 2022 has a more pronounced and livelier profile compared to 2017, reflecting the warmer and drier vintage conditions. The aroma is richer and more intense. Ripe red and dark fruit (cherries, plums, blackberries) is complemented by delicate notes of spice, cocoa, vanilla and noble wood. On the palate it shows fullness and roundness with smooth, well-integrated tannins and balanced acidity. The wine feels fresh and approachable, with a pronounced fruity trace and long persistence. Aromatic complexity together with a subtle mineral component and spicy undertone gives the wine depth and elegance typical of the Bodegas Mauro style, while also ensuring immediate drinkability as well as ageing potential.
Food pairing:
Both Mauro vintages are ideal for high-quality gastronomy. They pair wonderfully with roasted or grilled red meat, lamb, game and dishes with dark, reduced sauces. They also work well with mature cheeses or more luxurious ingredients. Thanks to its structure and depth, the wine can also be enjoyed on its own as a distinctive gourmet experience.
