Mestres Visol Gran Reserva Premium is a historically remarkable Cava from the D.O. Cava (Penedès) region, first produced back in 1945 and considered the first Brut Nature Cava in history, meaning a sparkling wine with no added sugar. Its name "Visol", translated as "wine on its own", perfectly captures the philosophy of the Mestres winery, whose roots go back to the 13th century and which has long specialised in long-lived, authentic Cavas with a pronounced terroir.
Grape variety:
The wine is made from the traditional varieties Xarel·lo (60%), Macabeo (20%) and Parellada (20%) from vineyards in the Penedès region.
Vineyard:
The grapes for Mestres Visol Gran Reserva Premium come from the vineyards of the Mestres winery in the Penedès region, where the family has been farming continuously since the 13th century. These are traditional plots of long-cultivated vines, often older, low-yielding vines, which produce grapes with high concentration and natural acidity, ideal for the long ageing of Cava. The vineyards lie on clay-limestone soils in a Mediterranean climate with a mild maritime influence, which supports the slow and balanced ripening of the Xarel·lo, Macabeo and Parellada varieties and gives the wine a mineral character, structure and the capacity for elegant development over time.
Ageing:
The base wine ages for 6 months in oak barrels and then for at least 60 months in bottle under cork, which gives the wine depth, structure and a complex aromatic profile. This method of ageing is typical of the Mestres winery and allows the wine to develop naturally without losing freshness.
Tasting notes:
In the glass, Visol appears a golden colour with greenish glints and a very fine, persistent mousse. On the nose it is elegant and rich, with notes of vanilla, light smoke, balsamic nuances, ripe fruit and dried fruit tones, coming from the long ageing in barrel and bottle. The palate is dry, precise and structured, with perfectly integrated carbonation, a long, clean aftertaste and no hint of bitterness.
Food pairing:
Recommended to serve at a temperature of around 8 °C, ideally as an aperitif or paired with seafood, oysters, fish starters or delicate Mediterranean cuisine. Mestres Visol is a Cava for connoisseurs. Distinctive, austere and sophisticated, it shows the power of time, tradition and precise, uncompromising craftsmanship.
