Empeltre is a traditional Spanish olive variety that comes mainly from the Bajo Aragón region, but is also grown in parts of Navarre, Rioja and the Balearic Islands.
This variety is prized above all for its mildness, low bitterness and delicate flavour with notes of almonds, dried fruit and sometimes butter.
The fruit is oblong, medium-sized, and takes on the typical dark violet to black colour as it ripens.
Empeltre is a versatile variety. It is used both to produce high-quality extra virgin olive oil and as a table olive, often preserved without brine, in olive oil alone.

Oil from this variety is light, golden yellow, with very low acidity and a delicate aroma, making it popular in gourmet cooking.
