F. Schatz, Chardonnay, D.O. Sierras de Málaga, white wine, 0.75l

A fruity wine aged 5 months "sur lie" with "batonnage" (occasional stirring of the lees back into the wine) in Slovenian oak barrels. The ageing method in the presence of wine lees enhances the individual aromas and gives the wine a richer flavour. It is also more stable, more complex and achieves a lower sulphur content. The length of ageing is left to the winemaker's judgement.
This was the earliest and fastest harvest that the winery in Ronda has experienced so far, yet it was a harvest of very good quality, and thanks to late rains in May and June, a very good and harmonious phenolic ripening took place.

Tasting notes: A captivating aroma of jasmine and white flowers with a lingering finish of subtropical fruit such as lychee, mango, kiwi or banana. A radiant straw colour. Deeply harmonious in the mouth, with an intense mineral acidity.

Food pairing: Chardonnay pairs excellently with delicate lobster, as they share a richness and delicacy of flavour. An equally perfect experience, though, comes from finding the exact opposite, such as spicy dishes from Asian cuisine. We recommend consuming at a temperature of 8-12°C.
