In 1980, following a trip to France, the third generation of the winery planted some experimental vineyards in the very calcareous soils of the Fuente-Álamo area.
Grape variety: Monastrell
Vineyard: This wine comes from vineyards at an altitude of 960 metres above sea level, where old bush vines aged 60-70 years grow on limestone soils. Bodegas Cerrón is known for its organic approach to growing grapes and making wine, with an emphasis on biodynamic practices and sustainability.
Harvest and ageing: Grapes are hand-picked and selected.
Taste and aroma: it stands out with intense aromas of ripe red fruit, complemented by herbal notes such as thyme and rosemary. The taste is fresh, full and well structured, with balanced acidity and mineral nuances.
Food pairing: The recommended serving temperature for this wine is around 16-18 °C, which ensures it can be fully enjoyed in all its complexity. It goes well with lamb. It can be roasted or grilled. This combination pairs beautifully with the herbal notes of the wine. Also ideal with vegetarian dishes, where the wine's mineral components enhance the flavour of roasted vegetables.
