Awards: 93 points – Robert Parker
Grape variety: 100% Tinto Fino (the local clone of Tempranillo)
Vineyard: The wine comes from organically farmed vineyards in the Los Colmenares area near the village of Gumiel de Mercado, in the heart of Ribera del Duero. The grapes are harvested from three plots: Cuesta Rubial, Carraquintana and El Olivo, the highest-lying of the three. The vineyards sit at an altitude of 830–890 m, have clay-limestone soils, and the vines are 20–30 years old. Thanks to this location and careful tending, the grapes achieve exceptional concentration and character.
Production and ageing: The harvest is done by hand, with careful grape selection both in the vineyard and at the winery. Fermentation happens spontaneously, using the grapes' own yeasts. Each plot is vinified separately at a temperature of 25–26 °C. This is followed by spontaneous malolactic fermentation. The wine ages for 12 months in French oak barrels (a combination of classic 225 l barrels and larger foudres) and then a further 12 months in the bottle before release. Around 26,000 to 32,400 bottles are produced each year.
Taste and aroma: The wine has a clean, deep cherry-ruby colour with a glossy sheen. The aroma is dominated by dark fruit such as blueberries, blackberries and plums, complemented by spicy notes of vanilla, nutmeg and clove. There are also hints of wood and liquorice. The palate is velvety, harmonious and fresh, with fine tannins and a very well balanced structure. The finish is long and pleasantly bitter, which adds elegance.
Tasting and food pairing: The wine is best served slightly below room temperature, around 16–18 °C, ideally decanted. Thanks to its complexity and balance, it pairs with a wide range of dishes. It goes well with braised meats, roast lamb or beef, game, but also with heartier risottos, pasta with mushrooms, richer fish such as tuna or salmon, or bolder cheeses. Pâté, a pulse-based ragout or creamy dishes can also make good partners.
